タピオカが黒いのは着色だって知ってた?

びっくりするくらい変わりない日々を過ごしています。
新しい話題が何もありません。

先週しれっと触れたタピオカ作りですが、自宅タピオカのは難易度が結構多くあるんですよね。奥深いんですよ自宅タピオカ。
なんとなく今日も作りたいな〜と思ったので、タピオカについて語ってみようと思います。趣味全振りです。ええ。
ちなみに、シンガポールで今日もタピオカ店が開いてたなら、自宅よりそっちの方に行きます。おいしいので。
個人的に好きなのはLIHO, KOI CAFE, THE ALLEYなどです。全部めっちゃおいしい、シンガポールによくあるお店。

タピオカは皆さんご存知、デンプンの塊です。キャッサバという芋の根茎のデンプンを水に溶き、ウォーー!!と加工(加熱と乾燥)したのがタピオカ粉。丸く粒状に長い間乾燥させると乾燥タピオカことタピオカパール。ここで、乾燥を粉状のままで一度止め、手捏ねで丸く固めたものが「生タピオカ」と言われるやつ。どちらもその後、茹でるとぷるっぷるもちもちのタピオカが出来上がります。(ここちょっと不安だからちゃんと調べ直した)

で。

完全に乾燥させたタピオカはひじょ〜〜〜〜〜〜〜〜に硬く、指じゃ全然潰せないです。水分がないから長期保存に向いているらしい。そのおかげか、ネットで乾燥タピオカを調べると大容量のパックばっかりです。実際にそこからタピオカを作るとなると、一晩ほど水に浸けてから茹でないと食べられる状態には持っていけません。個人で家で作りにはまぁ向いていないかな〜〜〜。

一方生タピオカは指でもぽろっと行きそうなやわさで、真空パックなどで小分けで購入できます。すでに水分を含んでいるので、長期保存には向いていませんが、下準備・茹でる時間が乾燥タピオカに比べて全然短く済みます。20分とかで茹で上がります。多分どのタピオカよりもちもちのタピオカが出来ます。

その亜種でタピオカ粉を購入することもできます。ただその場合、家で捏ねまくって丸く固めるという大変時間のかかる工程が増えます。ちょっと楽しそうだな〜とも思うので、いつかやりたい。

ちなみに「業務用冷凍タピオカ」なる、1分茹でるだけ!みたいなものも存在するそうですが、私は食べたことがないので触れないでおきます。日本のサイトとかではよく見るんですけどね。タピオカは一度冷凍すると芯が残ってもちもちを失いがちなので、どういう仕組みなのか気になりますけどね。こっちもいつか試したい。

私のオススメは俄然生タピオカです。最近は黒糖タピオカミルクティーが1時間弱で出来ました。

全部まとめてパッケージで買えるの便利〜〜〜。
家でタピオカ飲みたいな〜〜!だと生タピオカが楽です。
あとなんか、生タピオカの方が全然食感がいい気がします。もちもち感が強い。

あ〜〜!!書いてたらもっと食べたくなった!!やっぱり今日作ろうタピオカ!!!

ちなみに私前回のタピオカ作りが2回目と言いましたが、そのはるか昔に1回乾燥タピオカで作った時は死ぬほど時間かかったんですよね…2時間くらい茹でた記憶が…

So nothing new really happened this week, and hence I thought I’d write something that I simply enjoy during any occasion- bubble tea.

Bubbles, or pearls, or boba, or the correct name “tapioca”, is made from this cassava plant. It is a starchy root plant and is poisonous when raw. Whoo.

In certain areas of the world, like the Latin American and Caribean areas, this plant is often used to make bread, chips, all those starchy foods. From this plant, we dissolve the starch out with water, dry and all that, to get tapioca flour.

From this tapioca flour, it is rolled into circular shapes and dried. The drying process is what I find interesting. If you dry it midway, where the balls still hold some water, it is considered “raw” tapioca. They take less time to boil, and I personally find it chewier. If you dry it all the way till no water, you get super hard “dry” tapioca. These take forever to boil and require letting it sit in water overnight or something.

The one I made last week was the “raw” tapioca. It took about 20 minutes to boil, then another 20 minutes to make that brown sugar, and whilst that, milk tea- so less than 1 hour in total. And it was delicious That’s pretty good I’d say, judging from my past experiences. I once bought the “dry” pearls without knowing that they took so long and ended up boiling them for like, a solid 2 hours…

Well obviously, if all the bubble tea stores weren’t closed right now, I’d rather go there instead of making them home, like it’s still a whole hour. BUT THEY ARE ALL CLOSED SO I’LL MAKE THEM FINE

By the way, my personal favourite bubble tea stores are LIHO, KOI CAFE, and THE ALLEY. They’re all really good and all over Singapore! USUALLY! So if you get the chance to come to Singapore (when borders reopen) (and bubble tea stores reopen), do check those stores out.
